This was the happy result of being thrifty. Because a fair amount of cooked pumpkin was “left over” at the end baking pumpkin pies for Thanksgiving, we decided to experiment with a pumpkin cake. Zucchini bread has nuts so raisin would be an alternate. That one-time left-over cake has become a most popular item, always in great demand. ~ 15 oz ~
